Mexican Beer: Beer can add more flavors and an excellent texture to our chili. For our Guy’s fiery chili, we need 1 bottle of 12 ounces Mexican beer. 

Beef Stock: It’s a good alternative for water and can tenderize the meat fast. 

Kosher Salt: This type of salt is less intense but has a purely salty taste.

Cilantro: Cilantro is perfect for a fresh aroma and flavor among all the spiciness and bold flavors.

There’s no shortage of chili recipes in eateries around the US. This comfort food comes in different forms and flavors. However, chili is a great food to enjoy a warm dinner no matter how you look. Anyway, today we will be making Guys fiery chili

Mainly influenced by triple d chili recipes, Guy made a great version. Well, it’s a type of texas chili, and as you know – Texas chili is a little different from any other chili. For example, there’s no bean or tomatoes in the Texas chili. 

Instead, we will use six different chili peppers for the base. We want a burst of flavors from the dish. Most of the ingredients are mainly spices and other aromatic ingredients. Thanks to the different peppers, the chili will have a depth of flavors. After gathering all our ingredients, we need to proceed with the prep work.

Set it hot with nachos or bread once you get it out of the stove. This calls for a great lunch. 

Ingredients You Will Need Are

2 Pieces De Arbol Pepper

2 Pieces Ancho Chile Pepper

2 Pieces Guajillo Chile Pepper

1 Piece Red Bell Pepper

1 Piece Fresno Chile Pepper

1 Piece Anaheim Chile Pepper

1/2 Pound Beef Chuck Roast (Cubed)

1/2 Pound Ground Beef (You can also substitute ground beef with turkey meat or chicken meat)

2 tablespoons of Extra-virgin Olive Oil

1 Medium Sweet Onion

4 Garlic Cloves

2 Tablespoons of All-purpose Flour

2 Tablespoons of Cumin Powder

1/2 Tablespoons of Black Pepper

1 Tablespoon of Kosher Salt

Cayenne Pepper (to taste)

12 Ounce Mexican Beer

1/2 Quarts Beef Stock

3 Teaspoons of Chili Powder

1/4 Cup Cilantro

Step by Step Instructions for Diner Drive Ins and Dives Chili

Step 1: Tear the dried chiles into large pieces. Use a large skillet to toast the chiles over medium heat for 2 minutes until they change color. 

Step 2: Transfer the toasted chile to a small bowl. Then add hot water to the bowl and cover them to steam for 15 minutes. Once they are cooked, puree the chiles until smooth using a blender. 

Step 3: Turn your Dutch oven to medium-high heat. Then combine onion, garlic clove, red bell pepper, Anaheim chile pepper, and Fresno chile and put them inside the range. Cook for 7 minutes until the onion is translucent. 

Step 4: Add in the cubed beef and ground beef and cook for 8 minutes until browned. 

Step 5: Time to add in the all-purpose flour, cumin, chili powder, cayenne, and black pepper into the chili. Cook for 2 minutes until fragrant. 

Step 6: Add in the beer to deglaze the chile saucepot and scrape up the browned bits from the bottom of the pot. 

Step 7: Add the blended chile puree, beef stock, and salt. Bring the chili sauce to a boil. Finally, reduce the heat to a low simmer. 

Step 8: Cover the pot partially and let it simmer until the beef tenderizes. You need to cook for 2 hours to get a thick chili sauce. 
Step 9: Remove the pot from heat and stir in the cilantro as toppings.

Instructions

  • Toast the dried chiles for 2 minutes over medium-high heat
  • Steam the toasted chile in hot water for 15 minutes and make a puree.
  • Turn the stove to medium-high heat and cook onion, garlic cloves, and three types of peppers for 7 minutes until translucent.
  • Then add the cubed beef and ground beef for 8 minutes until browned.
  • Time to add other seasonings and all-purpose flour for 2 minutes until fragrant.
  • Finally, add the blended puree, beef stock, and kosher salt. Bring the sauce to a boil. Then, reduce the heat to a low simmer.
  • Partially cover the chili pot and let it simmer for at least 2 hours and serve!

Don’t hold back on using spices to flavor the chili liquid
