Andouille sausage: Get 1 package of sliced Andouille sausage. You need to slice them up before adding to the recipe so remember to do that beforehand during the preparation time.

Step 5: Fill the saucepan halfway with chicken broth and enough water to cover it. Bring to a boil, then reduce to low/medium-low heat and cook for 30 to 40 minutes, uncovered.

Step 6: In a large pot, combine the chicken and sausage. Before adding the chicken to the saucepan, remove the skin and as much fat as possible. Add a bit additional water if necessary to just cover the chicken. 

Step 7: Combine the garlic, salt, cayenne pepper, black pepper, and Cajun seasoning in a mixing bowl. Allow for an hour of gentle simmering. Remove the chicken from the gumbo and, if desired, debone it. Then return the meat to the gumbo.

Step 8: Continue to cook for another 15 minutes after adding the green onions and parsley. Skim as much fat as possible off the surface of the gumbo with a large spoon or a couple of wadded up paper towels.

Step 9: Gumbo should be served in shallow bowls with a scoop of hot cooked white rice on top. Finish with a sprinkling of gumbo filé. If desired, garnish with more green onions on top. Serve with toasted French bread and potato salad on the side.
