Know About the Quarterback Crunch Ice Cream Ingredients

It will have different steps, and you must prepare a couple of things. So, for now, Let’s start with the base. The base of the recipe is the old, basic, and everyone’s favourite vanilla Ice-cream. Let’s dig into the process.

Whipping cream: whipped cream adds a smooth texture to the ice cream, whether heavy or not. But of heavy, keep in mind the cream should not churn much. We are using 1 cup of heavy whipping cream.

Milk:  Try to find the whole milk. Do not use skimmed milk. The more the product would be fat-rich, the more the texture would be rich and creamy. We are using 2 cups of whole milk.

Egg yolks: an egg is used when we use a custard type ice-cream. Eggs work as an excellent binding agent. We are using 4 large egg yolks.

Salt: you may wonder why using salt in ice cream. Am I to talk about sugar, and is it a mistake? Actually, no. As we will be further making it a custard, there will be fruits and cornstarch added to it later, and a tad bit of salt can be used. But you can skip that too. It’s completely optional. We are using ½ teaspoon salt.

Method of Preparing the Quarterback Crunch Ice Cream

Step 1: In a medium saucepan, mix the cream, milk, and salt.

Step 2: Bring the mixture to a boil, and do not stop whisking throughout the time.

Step 3: Do not use high flame or heat. Medium heat is enough.

Step 4: Once boiling, remove it from the heat and allow it to cool completely.

Step 5: In a separate bowl, beat the egg yolks until they are light yellow.

Step 6: Slowly pour the hot milk into the eggs while continuing to whisk.

Step 7: Continue mixing until all the milk has been incorporated.

Step 8: Pour the mixture into the pan and place it over low heat.

Step 9: Stir continuously as the custard heats up.

Step 10: Cook the custard for about 5 minutes in low to medium heat or until it reaches 165 degrees F (75 C).

Step 11: Remove the pan from the heat and transfer the custard to an ice bath to stop the cooking process.

Step 12: Allow the custard to cool completely before moving on to the next step.

The Following Process is the Churning of Custard

Ingredients

  • 3 ½ cups half-and-half
  • ¾ cup sugar
  • 6 tablespoons cornstarch
  • 1 vanilla bean, split lengthwise
  • 1 tablespoon pure vanilla extract

Directions

Step 1: Pour the half-and-half and sugar into a medium saucepan over high heat.

Step 2: Whisk vigorously until the sugar dissolves.

Step 3: If it looks too time-consuming to dissolve, use sugar syrup or honey.

Step 4: After that, add the cornstarch and stir until combined.

Step 5: Place the saucepan over medium heat and bring the mixture to a simmer.

Step 6: Meanwhile, scrape out the seeds from the vanilla bean and add them to the saucepan along with the vanilla extract.

Step 7: Simmer the mixture for 2 minutes.

Step 8: Remove the pan from the stovetop and strain the custard through a fine mesh strainer into a clean container.

Step 9: Cover the container tightly and refrigerate the custard overnight.

Freezing the Custard

Freeze the custard according to your preferred method. For this particular recipe, I used my ice cream maker. You can also freeze the custard by placing it in a loaf pan and freezing it for at least 8 hours.

So now, everything is ready, and you can have your delicious custard with some topping added. And this is entirely personal. Use any toppings that you want to have with your custard. I am giving my favourite toppings here. One thing to mention, I will have this smoothing, so I will be using them by blending. You can make tiny little pieces and use them on top of it.
