Ingredients

  • 5 lbs turkey necks
  • 1 tbsp kosher salt
  • 1 tbsp  Cajun spice blend
  • 2 tbsp grape-seed oil
  • 29 oz low sodium chicken broth
  • 1/2 onions (chopped)
  • 4 garlic cloves (minced)

Instructions

  • Preheat the oven to a temperature of 350 degrees F. Turkey necks should be washed and dried using paper towels before being seasoned with kosher salt and Cajun spice blend. Place a dutch oven or oven-safe pan over medium-high heat and add cooking oil.
  • Sear or brown both sides of the turkey necks in a dutch oven for about 7-10 minutes. Place the turkey necks on a clean platter after they've been seared. Remove from the equation.
  • If required, add more oil to the same dutch pot and sauté the onions and minced garlic until aromatic. Deglaze with chicken broth and add more broth as needed. Return the browned turkey necks to the dutch oven and close the lid. Cook for around 2 hours in the oven.
  • Remove the turkey necks from the oven and serve over mashed potatoes or rice. Serve with the gravy on the side.

1 ½ cups of turkey brine
4 pounds of whole turkey giblets and necks
¾ of a cup of barbeque rub
6 small onions quartered
1 lemon quartered
4-5 sprigs of fresh thyme
4-5 sprigs of rosemary
A bunch of chopped parsley (about 2 tablespoons)
1 cup of chicken broth
fresh herbs for garnish

Method of Preparing Turkey Neck Recipe

Step 1: Preheat the slow smoker grill to the temperature of 250 degrees F. Apple wood should be added to the smoker. Using cooking spray, coat a large disposable aluminum pan. Tuck the turkey’s wings under the body and place it in the pan. Stuff the onion, lemon, and herbs inside the turkey’s cavity, then tie the legs together with kitchen twine.

Step 2: Using your hands, massage the BBQ rub all over the turkey. In the smoker, place the turkey. Cook for 6-7 hours, basting every 30-45 minutes with chicken broth, until a thermometer inserted into the thickest portion of the thigh reads 165 degrees F. 

Step 3: As needed, replenish the wood chips. Until they are fully cooked. Serve them with rice, garnish with fresh herbs.
