Usually, the pepper bacon cure recipe requires no excess ingredients. Also, it’s manageable with the pantry ingredients. So, our recipe will also be the same. You don’t have to collect any expensive or tough-to-find elements. Ingredients that you’ll need for this recipe are as follows-

Pork Belly (3 Pounds)

Take 3 pounds of pork belly. You should take 3 pounds or 4 pounds if you require it because this recipe is storable. The pork we can use any time we need. So, once you prepare your pepper bacon, you can use them for a couple of months.

Black Pepper Powder (2 Tbsp)

Since we’ll make pepper bacon, black pepper is also the key ingredient like the pork. You need 2 tbsp of black pepper. 

White Salt (¼  Cup)

As the amount of meat is huge, you require a standard amount of salt. And it will be sufficient to cover this 3-pound belly.  Therefore, we’ll take ¼ cup of white salt.

Pink Salt (1 Tsp)

Pink salt you need only 1 tsp as the regular amount. 

Warning: Pink salt contains 6.25% sodium nitrite. So, never ever eat the raw pink salt. It’s only for curing purposes.

Thyme (½ Tsp) 

Adding thyme will bring a nice flavor to your bacon. However, you shouldn’t go for fresh thyme in this recipe. Applying the ground thyme will be better. So, we’ll take ½ tsp of ground thyme. 

Granulated Garlic (1 Tsp)

When garlic is processed with a sand-like consistency is called granulated garlic. In a word, granulated garlic is dried garlic. Using this garlic in this recipe will increase the taste with a pleasant aroma. You need only 1 tsp of granulated garlic. 

However, if you have no granulated garlic, substitute it with garlic powder, garlic salt, garlic flakes, or minced garlic. 

Granulated Onion (1 Tsp)

To make the recipe thick and bulky, we prefer using granulated items like garlic and onion. So, in the case of onion as well, we prefer taking granulated onion. It will also come with a sand-like consistency. Take 1 tsp of granulated onion. If you don’t find it in the nearby shops, substitute it with the onion powder. 

Bay Powder (½ Tsp)

Applying bay leaf in any recipe increases the flavor. So, you can use it in your pepper bacon recipe as well. But, you must use the ground bay. Take ½ tsp of this element.

Brown Sugar (½ Cup)

Most people don’t agree with using sugar in the pepper bacon sure recipe. However, using sugar in this recipe will directly counter the salty flavor. Also, it will add flavor and will enhance the preservative capability. 

So, we would like to add ½ cup of brown sugar. Brown sugar will deliver a nice color than white sugar. 

How to Make Peppered Bacon?

Following the given steps, you’ll be able to cook the recipe-

Step-1 

Take a large container of plastic or aluminum whatever you have, and mix sugar, salt, thyme, bay powder, garlic, onion, pink salt, and black pepper.

Warning: Don’t go for checking the taste, it will seem like blech. We strongly recommend avoiding testing especially when you add pink salt. It will make you sick because pink salt isn’t edible. We‘ll apply it only for curing purposes. So, you must keep it in your mind. 

Step-2

Once you have made the seasoning or brine, you need to submerge the pork belly into the brine. Make sure you covered the whole belly with the seasoning mixture.

Step-3

This time, lid off the plastic container and refrigerate it for 10 days. In the halfway of refrigerating, you should flip up the belly and cover the seasoning juice all over on the top again. Now wait until it gets refrigerated perfectly.

NB: You must cover the whole pork belly with seasoning properly. Or, your recipe will be spoiled

Step-4

After 10 days of refrigeration, get the container out of the fridge. And, wash the belly with water. Rinse it as much as possible and remove the seasoning. After washing, pat the belly to dry water. You can use a paper towel to pat. It will give a quick dry.

Step-5

Now take the pork belly and put it on the countertop. As it’s a special treat with pepper, take freshly ground pepper and spread it over the pork. Spread over both sides and mix well.

Step-6

Now, the pork belly is ready to cook. So, set the temperature to your oven at 200° F. Ensure the internal temperature reaches 65° F considering the thickness. And it will take somewhere between 4 to 6 hours in total to cook the whole pork belly.

Step-7

It’s now time to take the bacon off the grill. It will look beautiful.

Now you need to slice the whole bacon. Before slicing the pork,  refrigerate it overnight. Unless it gets cold enough, you cannot cut the pieces. So, cover the pork with aluminum foil paper and keep it in the fridge.

Step-8

Now the bacon is ready to be sliced. So, take a sharp knife and slices it. Keep slicing in relatively thick and country style. 

Once you finished slicing the bacon, you have to pack them to refrigerate. And these bacon are storable for up to a couple of months.

Ingredients

  • Take the bacon off the grill
  • Cover the pork with aluminum foil paper and keep it in the fridge overnight to be cold before slicing
  • Take a sharp knife and slices it in relatively thick and country style 
  • Pack the sliced bacon in plastic bags and refrigerate for months of use

Tips

  • Put 5 to 6 pieces of bacon maximum in one bag. Don’t put more than that
  • If you use a plastic bag to refrigerate the pork, make sure it’s big enough to cover the whole pork belly. Or, the belly won’t get cured well, and you cannot make the recipe 
  • It’s important to maintain the temperature while cooking
