Dalgona coffee and a slew of other recipes invaded our Instagram and Following that trend, HBO max introduced a quarantine-themed cooking show starring none other than Selena Gomez. Selena + chef took us on a marvelous cooking journey and handed over some finest dishes recipes with the ingredients scattered around in the kitchen. Nana’s Cheesy Chicken Tortilla Chip Casserole

Even though the name is bulky and hard to pronounce, Gomez’s Nana jotted down the most vibrant comfort food for us, with the simple ingredients lying around in our pantry or fridge. 

Here’s how you can make it.

Ingredients: 

  • 2 cups of Rotisserie chicken (Shredded or strips)
  • 20-22 slices of Velveeta cheese 
  • 1 full jar of Jalapenos 
  • 3 cups of Tortilla chips 
  • 1 cup of Yellow onion 
  • 2 cups of Chicken broth 

Directions: 

Step 1: Preheat your oven to 350° F or 177° C. 

Step 2: Grab the dish that you will put in the oven. 

Step 3: Crunch the tortilla chips and put them in as a bottom layer of the casserole. 

Step 4: For the 2nd layer, add per-shredded strips of the rotisserie chicken. Be generous about it. 

Step 5: Add chopped onion and jalapenos depending on the spice tolerance. 

Step 6: Now, add the Velveeta cheese slices and cover up the bottom area. 

Step 7: Again, crunch some tortilla chips over the cheese. 

Step 8: Add a second layer of rotisserie chicken. 

Step 9: More Jalapenos and onion. (only if you can handle it) 

Step 10: Dip the casserole in chicken broth fully. 

Step 11: Now, add another layer of Velveeta cheese. 

Step 12: For some crunchy effect, add some crushed tortilla chips over the top. 

Step 13: Put the dish in the pre-heat oven and set the timer for 20 minutes. 

Step 14: After 20 minutes, check if the cheese has melted completely. If yes, bring it out of the oven and serve it hot. 

Daniel’s chicken meatballs + gnocchi

Daniel Holzman pioneered the best pair of wines, that is chicken meatballs with some buttery, yummy gnocchi. You can make the gnocchi from scratch as Selena did, or you can get a handful of store-bought gnocchi too. 

Now, jump to the recipe, shall we?

Daniel's chicken meatballs + gnocchi

Ingredients: 

  • 2lb of ground chicken 
  • ¼th cup of Dry white wine
  • 1 tsp of Fennel seeds. 
  • ½ cup of Breadcrumbs 
  • Parsley 
  • 2 large Eggs 
  • 2 tsp of Salt
  • 1 tsp of pepper. 

Instructions: 

Step 1: Preheat the oven to 425° F or 218° C. 

Step 2: Dice or chop fresh parsley and put it in a bowl. 

Step 3: Add 2lb of ground chicken to the bowl. 

Step 4: Now, crack two eggs and beware of the shells. 

Step 5: Have some salt bay action and put 2 tsp of salt in the mixture. 

Step 6: Add ¼ cup of dry white wine. (if you want it halal, you can add vinegar)

Step 7: add 1 tsp of ground fennel seeds and 1 tsp of black pepper. 

Step 8: Pour ½ cup of breadcrumb into the concoction. 

Step 9: mix all the ingredients by hand. You may add more breadcrumbs if needed. 

Step 10: On the oven dish, line up parchment paper. If that’s not available, you may brush some olive oil so the meatball won’t stick to the pan. 

Step 11: Take some of the mixtures and round it like a ball. You may use an ice cream scoop for easy execution. 

Step 12: Put the dish in the oven for 12 minutes and check with a toothpick whether it is cooked properly or not. 

Step 13: If they are ready, put them on the side of gnocchi or pasta of your preference.

Ludo’s French Omelette

I think one spark of the lockdown and home-office routine was that we didn’t have to rush breakfast and we could actually enjoy the important meal of the day. So, why not try something new and simple for breakfast! The very first episode of Selena + chef was about Chef Ludo Lefebvre’s famous French omelet. 

Let’s dig into the recipe. 

Ludo’s French Omelette

Ingredients: 

  • Eggs – 4 
  • Butter – 45 grams
  • Boursin cheese – 20 grams
  • Chives – 1 Tbsp
  • Salt – 2 pinches. 
  • White Pepper 

Directions:

Step 1: Take a frying pan. Try to find a 9-inch pan for the best flip. 

Step 2: Chop the fresh chives nicely. You can use scissors. 

Step 3: Crack 4 eggs one by one. Make sure no shell remains in the bowl. 

Step 4: whip the eggs with all the energy you have. 

Step 5: Some salt bay action with 2 pinches of salt. 

Step 6: Add white pepper for taste. 

Step 7: take the frying pan and melt the butter on a low flame. 

Step 8: Pour the egg mixture carefully onto the pan. No sizzling. 

Step 9: With a spatula, stir the eggs constantly. 

Step 10: Watch the heat and stir it quickly. 

Step 11: If you are happy with the consistency, add the Boursin cheese. 

Step 12: let the cheese melt. 

Step 13: roll the egg and voila!

Curtis’s Salt & Vinegar Chips

Salt and vinegar chips are a fan favorite flavor all across the globe. Selena + chef made us realize, that instead of dumping our money on big corporations, we can make some delicious salt and vinegar chips at home. With some 10-minute preparation and 30 minutes in the oven, we can make some crispy, salty chips for our next gathering, party, or movie night. You can make the chips 1 night beforehand and store them in an air-tight container. 

So, let’s get started. 

Ingredients: 

  • Russet – 1 To 2 (Medium-Sized)
  • Potatoes – Peeled
  • Neutral Oil – Grapeseed 
  • Canola (for Brushing)
  • Salt (for Seasoning)
  • Vinegar Powder (for Seasoning)

Some Special Equipment:

  • 18×13 Silicone Baking Mats – 2
  • Mandolin Slicer

Directions: 

Step 1: Preheat the oven to 300°F or 150° C. 

Step 2: Slice the potatoes lengthwise. Give them an oval shape. You can use a knife if you have nice chopping skills. Or you can use a mandolin. 

Step 3: keep dropping the slices directly into a bowl of normal water right after chopping. 

Step 4: To remove the extra starches, keep rinsing the slices under running water. Repeat the process until the water runs clear. 

Step 5: After that, dry them nicely. You can use a paper towel or kitchen tissue for this. 

Step 6: Now, dip a brush in oil and give those silicone baking mates a light brush. 

Step 7: Putting the oiled side up, place the may onto a sheet pan. 

Step 8: Take those dried-up potato slices and lay them on the mat one by one in a single layer. 

Step 9: With the second mat, keeping the oiled side down, lightly season those slices with salt. 

Step 10: Put the dish in the oven and bake it for 20 to 25 minutes. You should rotate the pan in the middle while baking. 

Step 11: Check whether the chips turned golden brown or not. You may need to bake it more for that golden-brown color. 

Step 11: Now take the slices out of the oven. 

Step 12: Season the chips with salt and vinegar powder. 

Step 13: You may dig in or wait till it cools down to store for later. 

Selena and chef cranberry sauce

Thanksgiving will be void without a yummy-looking, reddish cranberry sauce on the dinner table, right? This easy-to-make side dish may be overlooked over the huge turkey and mashed potatoes, but your palate will crave them once you put the roasted turkey in your mouth. You may find different variations of cranberry sauce in different stores. But honestly, thanksgiving screams homemade food and why need store-bought sauce when Selena + chef provides you with such a simple cranberry sauce recipe to follow? 

So, roll up your sleeve, and let’s make some yummy sauce. 

Selena and chef cranberry sauce

Ingredients: 

Fresh or frozen cranberry – 3 cups 

Whole black peppercorn – 1 ½ tsp. 

Whole coriander seeds – ½ tsp

Avocado oil – 1 tbsp

Granulated sugar – ½ cup

Orange juice – ¼ cup or one whole orange

Orange zest – 2 tbsp or half of orange peel

Water – ¼ cup

Fresh Pomegranate seeds – ½ cup. 

Directions: 

Step 1: Put the black peppercorn and coriander seeds together in a mixer. It can be a mortar, grinder, or pestle. Grind them until a nice powder mixture produces and set them aside. 

Step 2: Take a small saucepan and incorporate the spice mixture in oil on a low flame. Make sure the spices don’t burn. 

Step 3: Season them with salt. Now, put the flame a little bit higher and cook the paste until fragrant fills the room and makes you sneeze.

Step 4: Now, this concoction is ready for cranberry. Add the bowl full of cranberry. 

Step 5: Now, add sugar, orange juice, and water.

Step 6: Bring them to boil and immediately lower the flame. 

Step 7: Now, keep it on a gentle simmer, and cook it for 10 to 12 minutes. Make sure to cook until most of the cranberries burst. 

Step 8: Removing it from heat, add the orange zest and pomegranate seeds. 

Step 9: Taste it and add any seasoning if necessary.
