The Aplets and Cotlets recipe were originated by two American immigrants. And one was  Armen Tertsagian and another one was Mark Balaban. Aplets and Cotlets are jelly-like tiny candies or confections. 

These candies are usually baked in walnuts coated with powdered sugar. Although these are two different candies, they have the same consistency and taste. 

Be with us if you want to make this popular Aplets and Cotlets candy recipe at home. Making the process of these two candies is almost similar. Yet you have to go through two different times and methods.   Because you cannot make them at the same time. 

Aplets and Cotlets Recipe

The Origin of Aplets and Cotlets

The Aplets originated in 1918. However, the brand-new candy Aplets was introduced in 1921. Aplets were made from walnuts, honey, and the finest Washington apples. And Cotlets came on the market after a few years of the production of Aplets which was made from apricot. 

Later the Aplets and Cotlets were known as Turkish Delight among the Americans and British. And these two candies are now world-recognized candies.

Aplets Ingredients and Cooking Method

The Aplets and Cotlets are not the same recipes. So, you’ll have to take the ingredients separately and also make them at two different times. Here are the ingredients you need to make the Aplets-

Walnuts (1 Cup)

Take 1 cup of walnuts and chop them into small pieces so that they can be mixed nicely with other ingredients.

Apples (1 ½ Cup)

Take 1 cup of chopped Golden cooking apples. Cooking apples are usually much more perfect for cooking different delicious dishes rather than giving them as fruit. You can take red cooking apples instead.

Apple Liquid (½ Cup)

Arrange ½ cup of reserved apple liquid to make the Aplets sticky and flavorful. You’ll get this liquid after boiling the apples and water. 

Granulated Sugar (2 ½  Cups)

For a sweet taste, take 2 cups of granulated sugar. Granulated sugar brings a nice flavor than white sugar. Thus you should add granulated sugar.

Cold Water( 2 Cups)

Take 2 cups of cold water to boil the apples in it. Make sure the water is sufficient to dip the apples in 1 inch underwater. If you require 1 or 2 cups more, feel free to add on your own. 

Gelatin (4 Tbsp)

For a sticky texture, take 4 tbsp of gelatin.

Rose Water (1 Tbsp)

To ensure a floral aroma, you need to add rose water. So, take 1 Tbsp of this ingredient. 

Confectioners’ Sugar (1 Cup)

To coat the candies with powdered sugar, you need 1 cup of this ingredient.

How to Make Aplets Candies?

In nine simple steps, you can easily make these tasty sweet treats- 

Step-1

Get an 8ʺ size pan warped with parchment paper. Wrapping with parchment paper will easier your Aplets removal.

Step-2

Put a saucepan on the stove at medium heat. Put cold water and chopped apples. Make sure the apples are dipped into the water at 1ʺ depth. Let it boil for 2 minutes.

Step-3

Once the water starts boiling, reduce the heat and keep simmering for 30 minutes 

Step-4

Heat off the saucepan. Now drain the boiled water from the apples. Put the apples and ½ cup of drained water into a blender. Blend them smoothly. 

Step-5

Place the blended mixture back in the saucepan and add sugar. This time keep the heat low. Stir for 5 minutes and let the sugar melt. Heat off when the sugar is mixed with the apple mixture.

Step-6

Take a small size mixing bowl and mix together the apple mixture, gelatin, walnuts, rosewater, and 1 cup of cold water. Continue stirring to mix well. 

Step-7

Now pour the liquid mixture on the 8-inch pan that you wrapped with parchment paper. Let the mixture cool overnight or at least 1 hours. 

Step-8

Your Aplets candies are ready to cut into your desired shape. Cut them into a square shape with a 1-inch size. 

NB: Oil your knife before cutting both candies. Or, the knife will stick to the mixture and won’t get a smooth cut.

Step-9

Roll each candy into the confection sugar several times to coat perfectly. Aplets are ready to serve. 

Cotlets Ingredients and Cooking Methods

You require almost the same amount and type of ingredients to make your Cotlet candies compared to the Aplets. However, there’s a little dissimilarity in the amounts and types of elements you need. Let’s check out the list-

Apricots (½ Pound)

The key ingredient to making Cotlet is the apricots. So, take ½ pounds of it. Make sure you have taken the dried apricots. 

Apricot Liquid (½ Cup)

Besides, taking the dried apricots, you’ll also need the reserved apricot liquid. ½ cup will be perfect for this recipe. You’ll get this apricot liquid after boiling the apricots and water.

Walnuts (1 Cup)

1 Cup of chopped walnuts is also required to make your Cotlets candy.

Granulated Sugar (2 ½  Cups)

Like Aplets, Cotlets also require the same amount of granulated sugar of 2 ½ cups for an added sweet taste. 

Gelatin (4 Tbsp)

And, here again, you have to take 4 tbsp of gelatin to get a sticky texture to the apricot mixture. 

Cold Water (2 Cups)

As we said, some of the ingredients and amount are almost the same as the Aplets candy. So you need to take the same amount of cold water. Take 2 cups full.

Confectioners’ Sugar (1 Cup)

Take 1 cup of confectioners’ sugar as same as you took for the Aplets recipe. 

Lemon Juice (1 tbsp)

To get a tangy or sour taste, take 1 tbsp of lemon juice.

So, 3 additional ingredients are needed while making the Cotlets candy. And these are-

  1. Dried Apricots
  2. Liquid Apricots, and
  3. Lemon Juice

And all other ingredients are similar in type and amount to the ingredients of Aplets. 

How to Make Cotlets

Like the ingredients, the cooking method is also almost similar to the Aplets- 

Step-1

Get a pan ready as same as you did for the Aplets 

Step-2

Now put a saucepan on the stove at medium heat. Put apricot and cold water. Make sure the apricot is dipped into water by 1 inch. Keep stirring and boiling for 1 minute.

Step-3

Get a good simmering for 30 minutes and transfer the mixture into a bowl. Drain off the water and keep aside ½ cup of boiled liquid 

Step-4

Blend the boiled apricot and ½ cup of boiled liquid. Put them back in the saucepan and sugar. Keep the heat low and keep stirring for 5 minutes to allow the sugar to mix well with the mixture.

Step-5

You’re almost near making the Cotlets candies. Now take a bowl and put apricot mixture. Add walnuts, lemon juice, and gelatin. Stir them constantly to mix well. 

Step-6

Place the mixture on the wrapped pan with parchment paper. And let cool refrigerate for 1 hours minimum. If you can refrigerate overnight, it will get a good texture. 

Step-7

Cut the mixture into a 1-inch thick square shape. You can cut 70 candies from this mixture. 

Step-8

Now roll the candies into confection sugar and coat them well. If one-time rolling won’t get a nice coat, roll several times.

Instructions

For Aplets

  • Warp an 8ʺ pan with parchment paper.
  • Boil chopped apples and water for 2 minutes at medium heat.
  • After 2 minutes of boiling, reduce the heat and keep simmering for 30 minutes.
  • Blend  boiled apples and ½ cup of liquid water.
  • Transfer the blended mixture back to the saucepan and add sugar.
  • Stir for 5 minutes at low heat.
  • Now mix together the apple mixture, gelatin, walnuts, rose water, and 1 cup of cold water.
  • Place the liquid mixture on your 8-inch wrapped pan with parchment paper.
  • Let the mixture cool for at least 3 hours.
  • Cut them into a square shape with a 1-inch size.
  • Roll each candy into the confection sugar several times to coat.
  • Aplets are ready to serve.

For Cotlets

  • Wrap an 8-inch pan as same as you did for the Aplets.
  • Now boil the apricot and cold water at medium heat for 1 minute.
  • After 1 minute of boiling, simmer for 30 minutes.
  • Blend the boiled apricot and ½ cup of boiled liquid.
  • Put them back in the saucepan and add sugar.
  • Stir for 5 minutes to allow the sugar to mix.
  • This time, mix walnuts, lemon juice, and gelatin.
  • Place the mixture on the wrapped pan.
  • Refrigerate for 1 hour minimum.
  • Cut the mixture into a 1-inch thick square shape.
  • Now roll the candies into confection sugar and coat them well.
  • Your Aplets and Cotlets recipe is completely ready to serve.

Tips

  • You can store the Aplets and Cotlets for up to 6 months.
  • You also can add lemon juice with the Aplets ingredients rather than rose water.
  • If you don’t want to go through this lengthy cooking process, there’s a readily available Aplets and Cotlets mixture on the market. Take them, give a cut of 1-inch thick, and bake.
  • Adding peanuts to the mixture will increase the taste.
