Almonds (2 ¼ Cups)

This Italian biscotti recipe will come with an almond flavor. So, you need to take 2 ¼  cups of peeled almonds. Peel the almonds if they aren’t peeled. 

Sugar (1 Cup)

It’s a sweet-flavored biscuit recipe. So, you’ll need a good amount of sugar. If you like sweets the most, take 1 ½ cups of sugar. Or, 1 cup will be well enough. If you want to add an extra flavor to your biscuits, add granulated sugar.

Eggs (2 Large)

Take two large eggs. To make this dish, you need not take the egg yolk. You need only the egg white. So, take a bowl and separate the egg yolks from the egg white.

Salt (½ Tsp)

Take salt of ½ tsp. To make this recipe, don’t apply salt more than ½ tsp. It will distaste the biscuits. 

Vanilla Extract (2 Tsp)

Adding vanilla extract to this recipe will bring two results. First, it will offer a nice flavor. And second, it will make a good balance between all other ingredients. 

Almon Extract (2 Tsp)

For baked food items like biscuits, almond extract is a great ingredient considering flavor. Almond extract is made from water, alcohol, and bitter almond oil. It spreads a strong flavor that will make your Italian biscotti tastier. For today’s recipe, you need 2 tsp of almond extract. 

How to Make Soft Biscotti?

Pour the almond and sugar into your blender. Blend them togethere and make a smooth mixture. Ensure the almonds are ground well with no chunks.

Once the almonds and sugar are blended well, take the bowl of egg white. Now add salt and keep whisking until it becomes foamy.

This time, add almond extract, vanilla extract, and blended almond and sugar with the whipped egg white.

Keep mixing all the ingredients with a spoon for 2 minutes. Mix them properly so that the dough seems soft and smooth.

Once the ingredients are mixed well, grease your palms with oil. It will allow you to make the cookie balls easily. And, the cookies won’t stick to your palms. Now take 1 scope of dough in your palm at a time and make balls.

Once you finished making the balls, roll them into sugar.

Now put the rolled balls on a baking sheet in a raw style. Make sure they aren’t sticking with one another. Keep a bit of gap between each biscuit. Now insert an almond into each ball. Now refrigerate the balls for 2 hours.

Take out the sheet from the fridge and bake them for 20 minutes at 320° F in your oven.

Get them out of the oven and let the biscuit cool down for 15 minutes.
