Mashed Potato Ingredients:

Instructions
Make the Mashed Potatoes
Peel and cube 2½ lbs of russet potatoes. Rinse well.
Boil in a large pot until fork-tender (about 15 minutes).
Drain and mash with 4 tbsp butter, ½ cup milk, ½ cup sour cream, 1½ tsp salt, ½ tsp pepper, and ¼ cup grated Parmesan. Set aside.
Prepare the Filling
Sauté 1 cup diced carrots in 2 tbsp butter over medium heat for 5 minutes.
Add 1 small sliced onion and cook until soft.
Mix in 1 lb ground beef and cook until browned. Drain any excess fat.
Stir in 1 can Campbell’s tomato soup, ½ cup ketchup, and 1 tbsp brown sugar.
Add 1 tsp red wine vinegar, ¾ tsp salt, and ½ tsp pepper.
Fold in ½ cup frozen peas and ¾ cup corn kernels. Simmer 5–7 minutes.
Assemble & Bake
Preheat your oven to 400°F.
Lightly grease a 9x13-inch baking dish.
Spread the meat filling evenly across the bottom.
Gently layer the mashed potatoes on top and smooth with a spatula.
Brush the top with 2 tbsp melted butter.
Bake for 15 minutes, then broil at 500°F for 5 minutes to brown.
Let it cool for 10 minutes before serving.
