This time, lid off the plastic container and refrigerate it for 10 days
Get the container out of the fridge and wash the belly with water
Pat the belly to dry water
Now spread ground pepper on both sides of the pork belly and mix well
Cook for 6 hours at 200° F. Ensure the internal temperature reaches 65° F considering the thickness
Take the bacon off the grill
Cover the pork with aluminum foil paper and keep it in the fridge overnight to be cold before slicing
Take a sharp knife and slices it in relatively thick and country style
Pack the sliced bacon in plastic bags and refrigerate for months of use
Tips
Put 5 to 6 pieces of bacon maximum in one bag. Don’t put more than that
If you use a plastic bag to refrigerate the pork, make sure it’s big enough to cover the whole pork belly. Or, the belly won’t get cured well, and you cannot make the recipe
It’s important to maintain the temperature while cooking
