Instructions
Mix the bread crumbs, milk, egg, ricotta cheese, and parmesan in a medium bowl.
Add the salt, sausage, and pork. Mix gently with your hands to combine.
Heat a medium straight sided pan over medium heat.
Pour enough olive oil into the pan to cover the bottom.
Roll the meat mixture into balls the size of a full tablespoon and put them in the hot pan.
When the balls are brown all over, put them on a plate.
Keep going with the rest of the meat.
When all the meatballs are cooked, pour off the extra oil from the pan. Bring in the marinera.
Put the balls back in the sauce and put the lid on the pan.
Let the meatball cook for 15 minutes.
Take off the heat.
In the meantime, mix the arugula, lemon juice, olive oil, and parmesan shavings in a medium bowl.
Place 3–4 meatballs on top of the salad in each of 4–5 salad bowls. If you want, serve with more cheese.
