Instructions
Turn on your stove at medium heat and put the pan. Put vegetable oil and let warm for 1 minute.
Add bacon and saute for 5 minutes.
Add flour with the greased bacon and keep stirring for 5 minutes. Turn off the heat.
Put another pan and saute onion and celery with little oil for 5 minutes.
Now turn on the heat of the pan of bacon roux and add pre-made chicken stock. Keep stirring for 10 minutes.
Add black pepper and salt, and let the roux season well. Bring it to a boil for 5 minutes.
Add the pre-boiled potatoes to the soup roux and mix well. Keep stirring for 1 minute.
This time, you have to add the heavy cream and rue. Keep stirring them for 5 minutes at low heat
Your soup is ready to serve.
Tips
Adding 2 tbsp of cornstarch will help thicken the soup roux.
Cut and shape the vegetables in the same size.
Don’t season earlier before serving.
