Instructions
Marinating the Shrimp
In a bowl, combine cayenne pepper, salt, garlic, red wine vinegar, chopped basil, olive oil, and tomato sauce. Stir well until evenly mixed.
Set aside a small portion of the marinade to brush onto the shrimp while grilling.
Add 10–15 large shrimp to the remaining marinade. Toss gently to coat.
Cover and refrigerate for 45 minutes to let the flavors sink in.
Prepping for the Grill
Remove marinated shrimp from the fridge. Thread 4–5 shrimp onto each skewer, leaving slight gaps between each to ensure even cooking.
Preheat your grill to medium-high heat (charcoal or gas). Make sure the grill grates are clean and lightly oiled.
Grilling the Shrimp
Place the shrimp skewers over direct heat. Grill for about 2 minutes per side, until shrimp turn pink and slightly charred.
In the final minute, brush the reserved marinade over the shrimp for an extra flavor boost.
Remove from the grill and serve immediately.
Tips
Don’t Over-Marinate
: 45 minutes is the sweet spot—too long and the acid will overcook the shrimp.
Use Fresh Shrimp
: Frozen is fine too, but make sure they’re fully thawed and patted dry before marinating.
Control the Grill Temperature
: Too hot, and the shrimp will char before cooking through.
Brush With Love
: The reserved marinade adds an extra burst of flavor—don’t skip it!
Soak Wooden Skewers
: If using wooden skewers, soak them in water for 30 minutes to prevent burning.
