Prepare the apples: Peel the apples, remove the cores, and slice them into thin pieces.
Make the filling: In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and salt. Mix until the apples are evenly coated.
Prepare the pie crust: Place one pie crust into your pie dish. Pour the apple filling into the crust and dot with pieces of butter.
Top the pie: Cover the filling with the second pie crust. Seal and crimp the edges. Cut slits in the top crust to allow steam to escape.
Bake the pie: Bake for 50 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust are browning too quickly, cover them with aluminum foil.
Cool and serve: Allow the pie to cool on a wire rack for at least 2 hours before serving. This gives the filling a chance to set.
