Instructions
Slice the unpeeled potatoes into ¼ inch thick
Beat two eggs in a small bowl. Once the eggs are beaten properly, add ¼ cup of cold water and kosher salt
This time, take the potato slices and soak them in the egg mixture for 1 minute
Then coat the slices with all-purpose flour to fry them in deep oil
Make the potato slices deep fry for 5 minutes each batch
Your Mojo potatoes are ready to enjoy
Tips
Don’t over-fry the potatoes. Or they will become hard and also can be burnt
Remove the Mojo potatoes from the pan while golden brown
Serve them hot with sauces
