Instructions
Preheat the oven to 500 degrees F. and keep the oven rack on the second lowest position in the oven
On a large pan, place the roast, seasoning with salt and pepper
Roast in the oven for 45 minutes
Reduce the temperature to 325 degrees F.
Let it roast for another 30 minutes.
Increase the temperature to 450 degrees F. for an additional 30 minutes
Assemble ingredients to make the horseradish sauce and whisk. Serve!
